從小到大我們說果醬的英文都係以Jam表示,但果醬世界中其實有不同的種類,英文亦有不同的名詞標示,只不過中文只以果醬作為統稱。到底它們叫甚麼,還有它們有甚麼分別了?
Marmalade (柑橘類果醬)
通常使用柑橘類水果的果肉和果皮烹煮的果醬,果肉的甜和果皮的澀互相平衡。
Jam (果醬)
將水果及糖同時熬煮至水果軟化並釋放果膠形成稠狀質地,易於塗抹。
Conserve (雜錦果醬)
通常以幾種水果或加入果乾或堅果製作,質地較Jam結實更有口感。
Preserves (醃漬果醬)
以自身的果汁、糖漿或水保存的原個或塊狀水果。
Compote (佐餐果醬)
水果放糖水中慢煮至一至兩成水份蒸發,水果形狀完整度較高但糖度較低。
